Joe & The Juice was one of One Paseo's founding tenants when the center opened in 2019. In June it opened again across the street, on the upper level of Del Mar Highlands Town Center at 3435 Del Mar Heights Road, #9. On August 31, One Paseo got Goop Kitchen. It's the first Goop location anywhere with a dining room.
Put those two openings side by side and the summer's tenant changes add up to something specific. Both centers along El Camino Real are betting on health-minded spending, but they're pitching it in different ways. Del Mar Highlands has picked up the grab-a-smoothie, take-a-class version. One Paseo has gone for the version where you sit down for an hour, or stop at a counter for a Nordstrom return. Here's what changed on each side, what's still listed as coming soon, and what the October calendar looks like.
One Paseo traded a quick counter for a dining room
Goop Kitchen took over the former Tender Greens space at 3745 Paseo Place. Gwyneth Paltrow's food brand has run delivery and takeout kitchens since 2021, with 16 in California and three in New York, according to the San Diego Union-Tribune. None of them had seats until this one. The patio has black-and-white umbrellas with scalloped edges. Inside it's white with marble details and striped booths, and the servers wear green striped shirts to match.
The whole menu is gluten-free. Nothing is made with seed oils, refined sugar, processed additives or corn. The menu includes salads, bowls, wraps, soups, pizza and pasta. The Brentwood Chicken Salad is listed as a bestseller, and one of the nine pizzas is called Pepperoni Potts, after Paltrow's "Iron Man" character. You can still order takeout and delivery. Goop Kitchen is open every day from 10:30 a.m. to 9 p.m., and the full menu is on goopkitchen.com.
A few doors away, Nordstrom Local took the former West of Camden space at 3725 Paseo Place, Suite 1040, in front of The Log. It isn't a store. You go there to pick up online orders, make returns or grab one of Nordstrom's silver gift boxes. It also does alterations on clothes bought at Nordstrom, Nordstrom Rack or other retailers. It's the sixth Nordstrom Local in California. Hours are 10 a.m. to 7 p.m. Monday through Saturday and 11 a.m. to 7 p.m. on Sunday.
Both openings are built around a reason to stay put. Goop's selling point in Carmel Valley is the seat, since the food itself has been available for delivery for years. Nordstrom Local's selling point is a counter where someone takes care of a return or a hem. The KREWE luxury-eyewear pop-up, which One Paseo lists as open for a limited time, fits the same short-stay, browse-in-person pattern.
There's also one gap. Sweetfin Poke closed permanently at 3705 Paseo Place, Suite 1100. When SanDiegoVille reported the closure on August 25, nobody knew what would replace it. One Paseo's directory map from early September marks Suite 1100 as "coming soon" without naming a tenant.
Del Mar Highlands picked up the fast lane
Most of what opened at Del Mar Highlands this summer is the kind of place you visit in under 30 minutes, or for an hour-long class. Joe & The Juice is the third Joe in San Diego. The menu runs to cold brew, iced matcha, smoothies with Lion's Mane and Irish Sea Moss, and pressed sandwiches like the Tunacado. L&L Hawaiian Barbecue held a luau-themed grand opening at 3545 Del Mar Heights Road, Suite C7, next to Ike's Love and Sandwiches. The Union-Tribune also reported two new fitness tenants at the center, Perspire Sauna Studio and CorePower Yoga.
That's the role Joe & The Juice played at One Paseo when it opened in 2019. Now it sits near a yoga studio and a sauna studio, while One Paseo's newest health-food tenant has booths and table service.
The Sky Deck is the exception. Lobster Lab is open at 12841 El Camino Real, Suite 206. Its site lists hours of 11 a.m. to 9 p.m. Sunday through Thursday and until 10 p.m. on Friday and Saturday. The exact first day isn't settled. Early reports pointed to mid-July, and an event listing shows an opening celebration on Thursday, July 23.
What's open and what's still a sign
A lot of coverage this year has mixed up announced openings and actual ones. Here's each tenant's status as of September 30, 2026, based on the most recent report or listing we found:

Seabørn Cocktails is taking over the former Boochcraft taproom on the Brewer's Deck. As of a September 3 report, the center still listed it as coming soon, with hours to be announced. Wanderlust Creamery has been waiting longer. It was announced with a summer 2025 target, and the Union-Tribune still described it as "in the works" in July 2026. The center's own listing for Wanderlust hasn't been updated since January 8, 2026.
Once both of those open, Del Mar Highlands' late-afternoon options will include cocktails on the Brewer's Deck and ice cream by the fountain, alongside the juice bar and the yoga studio. Until then, the evening dining additions at Del Mar Highlands are on the Sky Deck.
The October calendar follows the same split
Del Mar Highlands' free Friday live-music series wrapped up September 18. For the rest of fall, One Paseo's events run longer and tend to happen on the Lawn or by the Koi Pond. Del Mar Highlands has packed its family events into one day.
At One Paseo
- Saturday, October 3, 3–5 p.m.: free live music with David de Alva.
- Saturday, October 10, 5–8 p.m.: a free outdoor screening of Hocus Pocus on the Lawn.
- October 10–11, 10 a.m.–5 p.m.: the Color Theory Collective pop-up near the Koi Pond, with private 30-minute sessions for $200.
At Del Mar Highlands Town Center
- Saturday, October 31, 10–11:30 a.m.: Party at the Pop Jet, a free family event.
- Saturday, October 31, 4–6 p.m.: trick-or-treating, with meet-and-greet zones at the Pop Jet Fountain, the Sky Deck, and between Panda Express and Ralphs. One part of the event listing calls the day a Friday, but Halloween 2026 falls on a Saturday.
If you've already planned a Halloween weekend around Hocus Pocus on the 10th, the movie night and the trick-or-treating are three weeks apart, on opposite sides of the street.
Sundays still start down the road
The Carmel Valley Farmers Market runs every Sunday at Torrey Pines High School, 3710 Del Mar Heights Road. New management took over this year and added live music and kids' activities, with a grand reopening on March 8, according to the Union-Tribune. The posted hours differ by source. The March article lists 10:30 a.m. to 1:30 p.m., while the County's certified farmers market list shows 10 a.m. to 1 p.m. If you're planning to pick up produce before a 1 p.m. table at Goop Kitchen, arriving at 10:30 covers both schedules.
